For me, salads always meant small portion of veggies tossed with lemon juice, pepper & salt to eat with main course. To eat it as a main course was obviously out of question for me until I came across this super delicious Caesar salad in one of the restaurants in the USA. It tasted absolutely amazing & refreshing. But the portion was not enough for me….lol…Yeah I am a foodie. So I decided to give it a variation as per my taste & appetite to enjoy it as lunch or dinner or at any other time when my kitchen does not look inviting. And luckily it came out simply amazing. Many variations of the salad exist but I enjoy this one immensely! 🙂

Let’s have a look at the ingredients first: Caesar Pasta Salad

Serves – 2

Ingredients:

2 cups of Penne Pasta, Uncooked (You can use any kind of pasta)

1/3 cup creamy Caesar Salad Dressing or more if needed

1 medium sized tomato, diced

Quarter cup each of Capsicum (Red, Green or Yellow), Red Onions/Spring Onions, Cucumbers

1/3 cup of Black Olives, diced

1 cup packed lettuce, chopped in bite sized pieces

1/3 cup Parmesan Cheese or to your taste

1 tbls Garlic powder or to your taste

½ tbls freshly crushed black pepper or to your taste

2 tbls Lemon Juice

½ cup croutons

Salt as per your taste

Note:  All ingredients mentioned are to taste. You can also add or skip veggies as per your tastes & liking.

1) Bring a large pot of salted water to a boil. Add your favorite pasta & stir gently. Cook uncovered for 10 min or when done.  You can refer instructions given on pasta package. DO NOT overcook.

Remove from heat & drain in a colander. Rinse with cold water to stop cooking process.

2) Take a large bowl. Add Pasta, Veggies, and Garlic Powder & Caesar dressing & mix it well.  Add good amount of  dressing to coat the pasta & veggies nicely.

3) Now add Lettuce, Parmesan Cheese & give it a nice toss.

4) Lets season it by adding some freshly ground black pepper & refreshing lemon juice. Don’t forget to add bread croutons, this salad is incomplete without super crunchy croutons. Give it a final toss and a  quick taste test. If required add some salt as per your taste and preference.

5) Transfer it in a plate/bowl & serve immediately.

NOTE: You can also make croutons at home. Take a loaf of any bread, cut it into bite sized pieces & spread it in a baking tray. Drizzle little bit of olive oil & bake it at 400 degrees Fahrenheit for 10 to 15 min or until brown. Please keep checking in between as everybody’s oven is different.

Enjoy this super delicious salad at any time of the day. You can serve it with crusty garlic bread on the side.
