Super Easy Eggless Sponge Fruit Cake Recipe

Some people just don’t like eggs or they have allergies from eggs. People can be vegetarian or they are advised by their doctors to avoid eggs. But that doesn’t mean you should put a stop to your cake cravings. With this super easy cake recipe, you will make an eggless sponge fruit cake that is soft and moist and very yummy. So, let’s get started with the cake recipe.

Ingredients

Dry Ingredients:

  • 1 cup (200 gm) all purpose wheat flour (Maida)
  • 3 tbsp powdered white sugar
  • 1 tsp baking soda
  • 1 ½ tsp baking powder

Liquid Ingredients:

  • ¼ cup (60 gm) unsalted butter, softened
  • 1 cup milk, at room temperature
  • 1 teaspoon vanilla essence
  • 200 ml condensed milk, at room temperature

Recipe / Instructions:

  • Preheat the oven at 170 degrees C. Grease a 8 inch round cake baking container with little butter and line the base with parchment paper. 
  • To make the eggless sponge cake, first combine flour, baking powder, and baking soda together in a bowl. Keep it aside. 
  • In another blending bowl, whisk the butter utilizing a hand blender or stand blender at medium speed, till smooth and creamy in texture. Slowly include the condensed milk and whisk well utilizing the hand blender for a minute. 
  • Now include sugar and vanilla extract, and again mix with the hand blender for a couple of minutes at medium speed. 
  • Include one third of the flour blend in the wet ingredients alongside half cup of milk. Cut and overlap to shape a lump free batter. Include remaining flour and milk. Make sure that the batter is smooth and there are no lumps of flour remaining.
  • Pour the batter in the prepared baking container. Bake for around 36 to 40 minutes in the center rack of the oven. Following 30 minutes, cover the container with an aluminum foil if the top of the cake is browning quickly. From this point, insert a toothpick in the centre of the cake to check that it is baked or not. 
  • When baked, remove the cake from the oven, and let it cool in the container for 10 minutes. Now invert the cake onto a wire rack to cool off totally. 
  • You can serve eggless sponge cake at room temperature or can refrigerate it a bit. 

Decorate Sponge Cake:

  • To layer the sponge cake, cut it evenly from the center into equivalent parts. In the base half include a decent amount of whipped cream and spread it with the rear of the spoon or spatula. Over the layer of cream include a couple of spoonfuls of strawberry compote and some chopped fruits.
  • Cover this layer with the upper portion of the cake like a sandwich. Cover the upper half too with cherry compote, cream, and sliced fruits. 
  • Place the cake in the fridge for a couple of hours before serving. The chilled cake will taste better and yummy as all the flavours are properly soaked.
