Well winter weekends are meant to laze around in your PJ’s and enjoy, but that doesn’t mean you have to run out of ideas while preparing your lunch. So here’s a simple recipe which does not take much time or effort and the ingredients are easy to find (mentioning this because that’s my peeve with most of the recipes). If you reside in Bangalore, Hyderabad, Mumbai or Pune then you are lucky in this case because you can order all the mentioned ingredients online at BigBasket without moving your a** (……well you have to open the door when the order arrives…don’t take me too seriously)

Egg Chicken Noodles

Egg Chicken Noodles is a popular Indo Chinese meal. This is a simple meal where noodles are tossed with eggs, shredded chicken and a lot of vegetables. The meal also has the authentic Chinese condiments soya sauce, celeries, bell peppers, vinegars and sweet chili sauce. Egg Chicken Noodles can be eaten with any Chinese gravy. In some cases, you may not need any gravy to complement the meal.I prefer to have it with soup. Following is a complete guideline on preparing the easy meal of egg chicken noodles. Have a look.

Ingredients

150-200 grams of dry noodles

1 bell pepper, finely shredded in thin slices

1 carrot, finely diced

2-3 well chopped beans

2 well chopped onions

1 finely chopped garlic

100 grams of boneless chicken

2 eggs

2 tablespoons of chopped celery

Sweet chili sauce

Vinegar

Salt

Pepper

Edible Oil

Method of preparation

Egg chicken noodles, is a pretty easy recipe. So, it will hardly take you a few minutes to prepare this meal. Begin with this meal, by boiling the noodles in a large pan. Add a dash of salt and oil to the noodles. This will add to the taste and prevent the noodles from sticking together. Cook for 10-12 minutes till the noodles become tender. Now, remove the wok from the flame and drain the water from the noodles. While boiling, make sure that the noodles are perfectly cooked and are not overcooked. Overcooked noodles can mar your entire meal.

After this, heat the wok and add two tablespoons of oil to it. Now add the vegetables and stir-fry them for 3-5 minutes. Soon, after cooking the veggies for a few minutes add the chicken. Mix the chicken well with the vegetables and let the entire thing cook for another 4-5 minutes. Continue with the sauté until the chicken and veggies get a light brownish hue. Sprinkle some salt and pepper for taste.

As soon as you’ve done this, add the chopped celeries to the mixture and cook for 1 more minute. You will now have to add one tablespoon of soya sauce, half tablespoon of vinegar and one tablespoon of sweet chilli sauce to the vegetables and the chicken. Stir fry the veggies and the chicken in these sauces to give a tangy and spicy flavor to the meal.

Continue the light sauté of the veggies and the chicken, while you heat another wok. As soon as the new wok is heated, lightly drizzle two tablespoons of oil on it. In the meanwhile, break the eggs and lightly beat them in a container. Add a dash of salt, pepper. You can also add the chopped celeries to the beaten eggs. Now, pour the eggs on the wok and scramble it with a spatula. Continue scrambling the egg until it gets a light golden hue. Now, add the saucy veggies and chicken to the eggs. Mix all the ingredients well with a spatula and cook for 2 more minutes.

Finally, add the noodles, mix it with the remaining ingredients and cook it for 1-2 two minutes. Your egg chicken noodles, is now ready. Serve hot with sweet chili sauce and chili vinegar. These noodles will turn out to be a scrumptious and incredibly tasty delicacy.
